Introduction
In
addition to its Hospitality Diploma, the International Institute
of Travel also offers a Hospitality Certificate Programme.
Any of the courses listed below can be taken individually
or in any combination to suit your need. Upon completion of
a certificate programme you will be qualified to work in specific
areas in Hospitality. Certificate programmes are generally
recommended for individuals who are currently employed in
the Hospitality Industry or who have previous training in
hospitality and are in need of a refresher course or courses.

Office Procedures
- an overview of the lodging industry; hotel organization
& reservations; registration; responsibilities; accounting;
check out and bill settlement; night audit; planning & evaluating;
revenue control; and human resources.
Food
& Beverage Service
- service management; menu development; food /beverage service
style and procedures; supplies & equipment; design & décor;
sanitation and safety; labour & revenue control; casual /theme
restaurants; banquets; & catered events; room service; on-
site food service.
Financial
Accounting
- basic accounting principles; adjustments; completing the
accounting cycle; the income statement; the balance sheet;
specialized journals & subsidiary ledgers; cash; receivables
& payables; inventory; equipment; current liabilities; payroll;
partnerships; corporations; bonds/leases/mortgages; investments;
statement of cash flows; and analyzing financial statements.
Sales
and Marketing - current trends; marketing plans; the sales
office; personal sales; telephone sales; Internal sales; restaurant
/lounge sales; catering/ meeting room sales; advertising &
public relations; and business travelers/ travel agents/ other
special segments.
Hospitality
Law
- the common law and hospitality; contracts; tort law
& negligence; hotel's duties to guest; guest's rights;
liability for loss; fraud; trespass; general laws affecting
food service; alcoholic beverage laws; wage/employment laws;
anti-discrimination laws; use of lie detectors; immigration
laws; unemployment insurance & workers' compensation; income
tax & reporting requirements; consumer protection; occupational
safety; public health requirements; licensing issues; fire
safety; copyright; warranties & product liability; anti-trust
issues; and franchising.
Food
& Beverage Management
- an overview of the food service sector; organizational
structure; management principles; marketing; nutrition & the
menu; controlling costs & pricing strategies; preparations
& production; guest service; sanitation & safety; design/
layout/ equipment; and financial management.
Hospitality
Supervision
- the supervisor/ skills; effective communication; recruitment/
selection procedure; orientation/ training of staff; managing
productivity & controlling cost; evaluating & coaching; discipline;
special concerns; team building; motivation of staff; managing
conflict; time management; change; and professional development
& trends.

Note:
- Hospitality Certificate programmes are full time only and
are offered Monday through Friday from 9:00 a.m. to 1:00 pm.
However, the hours of attendance may vary by location and
course lengths may vary for locations outside of Ontario.
